Glazed Almond and Cinnamon Coffee Cake 2012

 

Ingredients

 

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 stick (8 tablespoons) cold unsalted butter, cut into small pieces
  • 1 large egg, lightly beaten
  • 1 cup well-shaken buttermilk
  • 1/2 teaspoon pure vanilla extract
  • 1/8 teaspoon pure almond extract (optional)
  • 1/2 cup unsalted dry-roasted almonds, coarsely chopped (3 oz)
  • FOR GLAZE:
  • 1/2 cup sifted confectioners' sugar
  • 2 tablespoons heavy cream
  • 1/8 teaspoon pure vanilla extract
  • 1 drop pure almond extract (optional)
  • 2 tablespoons unsalted dry-roasted almonds, coarsely chopped (3/4 oz)

    Directions

    Preheat oven to 350F with rack in center of oven. Butter and flour pan bundt 6 cup mold or 9 - inch square baking pan, resulting in uninterrupted excess flour.

Almond and cinnamon cake recipe 2012

Ingredients
  • 5 medium free range eggs
  • 200 g (7.1ozground almonds
  • 200 g (7.1ozunrefined golden caster sugar
  • 15 g (0.5ozground cinnamon
  • 50 g (1.8ozalmond flakes
  • 15 ml (0.5fl ozvanilla extract
For decoration
  • 1 cup cinnamon sticks

Step-by-step

  1. Pre-heat the oven to 180°C/160° fan/Gas 4 and grease and line a 9 inch cake tin with baking parchment.
  2. Using two bowls, separate the eggs placing the whites in one bowl and the yolks in another.
  3. Using an electric handheld or freestanding mixer, whisk the egg whites until stiff, and in the other bowl, whisk together the yolks, vanilla extract and sugar until completely pale and aerated.
  4. Slowly fold in the ground almonds and the cinnamon into the egg yolk mixture, being careful not to lose any air.
  5. Next slowly add the egg white mixture, carefully folding in after each addition so you don’t lose any of the air in the mixture.
  6. Pour into the lined cake tin and sprinkle with the flaked almonds.
  7. Place in the oven and bake for around 35-45 minutes, or until a skewer comes out clean.
  8. Once the cake is completely cooled, remove from the tin and place onto a cake stand, sprinkle with icing sugar and decorate with some broken cinnamon bark in the centre.

Make the Best Looking Meatloaf Cake 2012

I made this meatloaf 3 - cake layers in an attempt to fool my wife and kids and go does not work! I took every 6 hours to put the cake together and prey Meat Loaf still get it to look like you really want that.
Why did it take so long? Well, I'm glad you asked.
I did everything that could go wrong ... To go wrong! At first, I did not buy enough of minced meat (Well, in this meatloaf cake, which are actually ground turkey) so we had to stop what I was doing to run to the store to buy some more .
So I went back to the store and prepared to put in the oven just to burn the hell out of meat. So I had to go to the store to buy some ground turkey so I can start over again.
Finally, everything is cooked properly in only the second time we realize that we have no patotoes puree (immediate), so I had to go to the store to buy a patotoe instant mashed mix in the box.
I got home and realized I had no sauce, meatloaf, so I had to return back to the store to buy some meatloaf sauce! At this point, I was ready to throw in the towel, but had come too far to quit now!
Anyway, I finally got everything I did mashed potatoes to make a meatloaf pan look like a real cake with ice. Rather than putting the mashed potatoes on the cake, I got a meatloaf pan more realistic to consider. I could not believe it!

American Chop Suey – Vegetarian 2012


It happens to be blessed with a number a good few chefs / in my life, and are more than willing to share knowledge in cooking tips. It attributed most Indian dishes Chinese inroads in this space to these kind souls. God bless you. It's no secret that I love Chinese fusion Indian cuisine. Sometimes many foods, especially in Indo-Chinese fusion to start and chicken and sweet corn soup is a must. :)

Nihal is very fond of America Seal Sui and I created the magic in my kitchen, repeat the taste of the restaurant. She loved it, and I am a happy mother! You must remember that a fried egg you see in the picture above is not part of the recipe unique piece. Nihal loves eggs with a piece Sui and I wanted it to feel like I was eating in a restaurant.
Ingredients:

2 onions, each cut into 8 pieces
1 carrot, cut into thick pieces
8-10 french beans, cut into 1″ pieces
1 cup cabbage, cut into big pieces
4-5 babycorns, cut diagonally into two to three pieces
2 green bell peppers, cut each into 8 pieces
1 tsp light soya sauce
1 1/2 tsps chilli sauce
3/4 tbsp vinegar
1 1/2 tbsps tomato sauce
1 tsp brown sugar
1 1/2 tbsps cornflour combined in 1 cup water
salt to taste
black pepper powder to season
2 tbsps sesame oil or peanut oil
 For fried noodles:

3 cups par-boiled noodles, drained and dried on a kitchen towel, sprinkle a tbsp of cornflour and mix
oil for deep frying
1 To parboil vegetables, boil a liter of water with 1/2 tsp salt. Add carrot, cabbage and beans to the boiling water and cook for 2-3 mts. Remove from heat, strain and pour cold water over the vegetables and strain again. Keep aside.
2 Heat oil in a large wok, once the oil is hot, add the onions and saute on high for 2 mts.
3 Add the baby corn and capsicum and saute for 5 mts. Add parboiled vegetables and saute for another 3 mts.
4 Add soy sauce, vinegar, chilli sauce, tomato sauce, black pepper, sugar and salt and mix. Add 2 cups of water and bring to a boil. Reduce flame and cook for 3-4 mts. Add the corn flour along with water and go on stirring continuously till it thickens slightly and coats the vegetables. Remove from heat and keep aside.
5 To prepare fried noodles, heat oil for deep frying in a heavy bottomed vessel. Once hot, reduce flame to medium and place around 1 1/2 cups of noodles (if the vessel is small, add only one cup) and cook till it turns golden brown. Remove onto absorbent paper and repeat with rest of the noodles.
6 To serve, place the fried noodles on a plate. Ladle the vegetables over the bed of fried noodles and top with a bull’s eye (fried egg). Topping with egg is purely optional. Serve warm.

Birthday Cake Recipe 2012


 Preparation time:
30 minutes
Cooking time:
 35 minutes
 Oven temperature: 180 C / Gas mark 4

 Makes:
 1 x 20cm/8" square cake


Ingredients

 

  • 225g/ 8oz Glutafin Gluten Free Multipurpose White Mix
  • 1 ½ x 5ml tsp Gluten-free baking powder
  • 165g/ 5 ½ oz Butter (at room temperature)
  • 165g/ 5 ½ oz Caster Sugar
  • 3 Medium eggs (at room temperature)
  • 5 x 5ml tsp Cold water
  • 1 ½ x 5ml tsp Natural extract of vanilla


Buttercream


  • 500g/ 1lb Icing sugar (sieved)
  • 225g/ 8oz Butter (at room temperature)
  • 1 x 5ml tsp Natural extract of vanilla
  • 75g/ 3oz Firm set jam
  • 500g/ 1lb White fondant Icing
  • 75g/3oz Each of red, blue and yellow fondant icing



To Decorate


  • Coloured thin ribbon and candles

Method

1. Won cake ingredients with electric mixer for 2 full minutes to give consistency to fall softly. Place in the bottom of the box 20 cm / 8 "greased and lined pan.

Veg Stuffed Capsicum Rolls 2012





Ingredients


  • 1 large capsicum
  • 1 tbsp urad dal
  • 1 tbsp coconut
  • 2 long red chillies
  • 1 medium sized potato
  • 1/2 tsp Chilly powder (optional)
  • Salt
  • Oil

Directions:
  • In a microwave, cook the capsicum until soft. Then, cut into 2 halves and de-seed it.
  • In a pan, heat very little oil and fry the urad dal. When it starts to change color, add the coconut and fry until the coconut is golden. Grind this along with the whole red chillies into a coarse powder.
  • Cook the potato in the microwave and mash it. Mix this with the ground powder along with salt and chilly powder if required.
  • Stuff this into the capsicum halves. Bring together the edges and press to seal. Then cut them into small rolls and fry it on a tawa with some oil

Spicy Chicken Masala Curry 2012


There are certain recipes that always remain our favorites and we can never be tired of cooking and again. A favorite recipe that I cook often and is enjoyed by my family and friends is the Spicy Chicken Masala Curry. It is better than any restaurant recipe. This recipe for chicken curry is not a luxury, simple, easy and quick to do. I do not remember the source of recipes, its been there in my recipe files for centuries, I thought I'd share.
Spicy Chicken Masala Recipe

½ kg chicken, washed and cut into medium sized pieces
3 tbsp curds
1 tsp red chilli powder (adjust to suit your spice level)
¼ tsp turmeric pwd
salt to taste
Make a paste:
6-7 cashewnuts
4-5 tbsps milk
Dry roast and make a fine powder:
1” cinnamon
10-12 curry leaves
3 cloves
Rest of the ingredients:
3-4 tbsps oil
2 big onions finely chopped
1 large tomato finely chopped
1 tsp ginger-garlic paste
1 tsp coriander powder
3/4 tsp black pepper powder (adjust to suit your spice level)
¼ tsp cumin powder
coriander leaves for garnish

Marinate chicken pieces in chilli powder, turmeric powder, curds and salt for 20 mts.
2 While the chicken pieces are marinating, make a paste of cashewnuts and milk. Keep aside.
3 Dry roast cinnamon, cloves and curry leaves for 1 mt and make a powder of them. Keep aside.
4 Heat 1 1/2 tbsps of oil in a cooking vessel. Add the onions and saute till pink. Add ginger-garlic paste and saute further for another 3-4 minutes on medium heat.
5 Add coriander pwd, cumin pwd, pepper pwd and combine well and fry for another minute.
6 Add the tomatoes and let it cook for 3-4 minutes. Combine well and cook till oil separates.Turn off heat. Cool and grind the cooked masala. Keep aside this masala paste.
7 Heat 1 1/2 tbsps oil in a cooking vessel and add the marinated chicken and cook on high flame for 4-5 minutes, reduce heat and cook covered for another 4-5 minutes.
8 Add the ground masala paste, cashewnut paste and ground powder of cinnamon, cloves and curry leaves and combine well. (Add a cup of water for more gravy consistency). Cook till chicken pieces are soft and you get the desired curry consistency. Adjust salt.
9 Garnish with fresh coriander leaves.

DAHI PURI 2012,2013
